Toad in the hole - a work in progress

 
I am going to get this right if it kills me. Toad in the hole is supposed to be a simple little dish of batter pudding, with sausages embedded in it. But try as I might if it rises it doesn't brown evenly, or it just doesn't rise, or my dish is too big so the batter doesn't fill it properly.

Still tastes good though. I use nice, meaty sausages, and embed chunks of black pudding and onion into it as well. Even dodgy batter soaks up gravy nicely.

I've been meaning to try my hand at toad in the hole, but haven't as of yet. I love the concept, though! And it looks delicious.

It never looks good when I do it either. Usually goes down well though :) Keep trying but it's meant to be 'rustic' isn't it!?

Do you have the baking dish really really hot before you add the batter?

Your dish looks wonderful (though black pudding scares me a bit). I often make toad in the hole for breakfast, but my Italian-American version is a very pedestrian bread with a hole in it into which you crack an egg and fry on both sides. Certainly not as complex, but I love hearing about different cultures' takes on the same-named dish.

Still looks pretty great to me... have you tried changing up the fats in the baking dish to help get the heat higher for a good puff?

Seriously, I have never had a good 'toad' from a glass or enamel dish, metal all the way baby!

I love the idea of this dish. I made it once years ago and really enjoyed it. I think the recipe I used belonged to Nigella Lawson. Yours looks better than hers. Kudos...Mary

I make awful toad in the hole. Have tried a lot of recipes and still varies halfway between a soggy omelette or oven charrings!
